I accepted and signed for another job but my current place has convinced me to stay. Could I now be sued?

The legal position on this is quite straightforward. Unless specific provision is made in the contract for you to change your mind, you will be in breach of contract and the new firm could sue you for any losses it suffers as a result of your breach.
